Lemon Coconut Slice Recipe



This quick and easy no-bake slice has a moist, coconutty base and a soft, sweet lemon icing. It is finished with a sprinkling of coconut. You'll need one or two lemons for this recipe.

Please note: We use a 20ml tablespoon and 250ml measuring cup for all of our recipes. If you are using a 15ml tablespoon, you will need to use 1 tablespoon plus 1 teaspoon of lemon juice in the base and 2 tablespoons plus 2 teaspoons of lemon juice in the icing.

Makes about 18 pieces (each about 4.5cm by 6cm).

80g butter
250g (3/4 cup) sweetened condensed milk
250g Nice biscuits (we use Arnott's brand)
85g (1 cup) desiccated coconut
1 tablespoon (20ml) fresh lemon juice

Lemon Icing
250g (1 3/4 cups) icing sugar
2 tablespoons (40ml) fresh lemon juice
1 1/2 tablespoons desiccated coconut, for sprinkling on top of slice

Grease an 18cm by 28cm slice pan or baking dish and line pan/dish with baking paper.

Place butter and condensed milk in a small saucepan over medium-low heat, stirring occasionally. Remove from heat when butter has melted and mixture is smooth. © exclusivelyfood.com.au

Finely crush biscuits using a blender or food processor. Stir crushed biscuits and coconut together in a large bowl until well combined.

Stir lemon juice into condensed milk mixture.

Add wet ingredients to dry ingredients and stir until well combined. The mixture will appear quite wet at this stage.

Press mixture into the prepared pan. The base of a flat-bottomed glass can be used to help press the mixture down firmly and smoothly. Refrigerate while preparing icing (see instructions below).

Spread lemon icing over slice and sprinkle with extra coconut.

Refrigerate slice until cold and firm then remove from the pan and cut into pieces. Store slice in an airtight container in the refrigerator or freezer.

Lemon Icing
Combine icing sugar and lemon juice in a small saucepan over low heat. Stir until mixture is warm to the touch and completely smooth. Remove from heat and use immediately.

This is the yummiest no bake slice I've ever eaten !! I'd like to make a chocolate version since the rest of my family don't like lemon. If I add cocoa and leave out the lemon, how much cocoa do you suggest, and do I need to replace the lemon juice with another liquid.
Brilliant site BTW, have earmarked plenty of other recipes to try.

Are these quantities right?

250g condensed milk = 3/4 cup?
85g coconut = 1 cup?

Will make it with the 3/4 & 1 cup quantities and see how it goes.

To make a chocolate version of this slice, we would suggest the following (we haven't tested these suggestions!)

1) Use 1 tablespoon milk instead of 1 tablespoon of lemon juice in the base
2) Add 2-3 tablespoons of cocoa to the base
3) Use 2 tablespoons of milk instead of 2 tablespoons of lemon juice in the icing
4) Add 2 tablespoons of cocoa to the icing

This slice is to die for, it explodes in your mouth*@!* I use a whole can of condensed milk(395gm) and scotch finger biscuits for a moister base. I use Homebrand "everything" for a cheaper alternative, works great every time. Cant wait to try the chocolate version listed. Fantastic site cant wait for more recipes to arrive!!!

Very quick and easy, a simple lemon slice.
Substituted Nice biscuits with home brand scotch fingers, more for cost reasons than for texture, but it turned out magnificently.

We serve this slice straight from the refrigerator. It is fairly firm when cold but will soften as it warms up.

For a firm base, make sure you use regular butter (don't substitute margarine or spreadable butter). If you would like the base to be firmer, you could reduce the amount of sweetened condensed milk and/or increase the amount of butter.

If you want to use a whole 395g can of condensed milk, then you'll need to increase the quantities of the other ingredients as well. The following quantities will produce a larger version of the above slice:

126g butter
395g can sweetened condensed milk
250g packet Nice biscuits plus 150g Nice biscuits
134g (1 1/2 cups plus 1 tablespoon) desiccated coconut
30ml (1 1/2 tablespoons) fresh lemon juice

Lemon Icing
395g (2 3/4 cups) icing sugar
63ml (1/4 cup) fresh lemon juice
2 1/3 tablespoons desiccated coconut, for sprinkling on top of slice

To make the slice firmer, you'll need to reduce the proportion of condensed milk and/or increase the proportion of butter. You could try the following quantities for the base (enough for two 18cm by 28cm pans):

200g butter
395g can sweetened condensed milk
Two 250g packets Nice biscuits
170g (2 cups) desiccated coconut
40ml (2 tablespoons) fresh lemon juice

no idea about anyone else but the icing sugar and lemon on the stove top goes absolutely hmmm how can i say it yuck... its also set rock hard and i have followed the directions to a T. So ive wasted my time and money making this as its going straight in the bin.

I have made this recipe twice and have had problems with the licing?? This time l needed more so had to make a second batch of icing with just water as l didn't have any more lemons. Have followed recipe exacty, any suggestions??

Hi Amy,

The iced slice can be stored in an airtight container in the refrigerator for at least three days.


To the person whose icing set rock hard: Could you have overheated the icing? It should only be heated until it is warm, not hot. If the icing is heated for a long time or at a high temperature, too much of the liquid will evaporate from the icing making it dry/hard. You could also check whether your tablespoon measure actually holds 4 teaspoons (20ml). If you have a 15ml tablespoon, then you will need to add an additional 2 teaspoons of lemon juice to the icing to obtain the intended consistency.


To the person who needed more icing: Did you find that you needed two full batches of icing to cover the slice (a total of 3 1/2 cups of icing sugar and 4 tablespoons of lemon juice), or did you use only part of the second batch? Were there any other problems with the icing?

As per your earier reply l have checked my tablespoon ml and it is ony 15ml so that coud be my problem why l did not have enough icing. When l made the second batch l halved the quantities l did use all of the second batch. Will give it another go making sure l use the extra 2 teaspoons of lemon juice.

I've tasted this slice before and know it's yummy. I'm taking it to work and making it with my patients for a fun activity group idea. It will fit into the short time frame I have as it can be made quickly and I know they'll love it too.

Hi, l have just made another batch with the correct amount of lemon juice for the icing and it was perfect. Cannot beleive that a few mls of lemon juice could make so much different. It was so much easier to spread this time and l add enough to cover the entire base.

Did you use scales to measure the butter? Did you make any changes to the recipe? Prior to refrigeration, the slice mixture is quite wet. Did the slice taste too buttery once it had set?

Just wondered if there was a substitute for the condensed milk? My daughter is allergic to dairy and would love to be able to replace the condensed milk with something else - haven't used it in quite some years so not sure of its consistency???

Great easy recipe - could I suggest that you put the instructions for preparing the lemon icing before the instructions to spread it on top of the base? I only realised it was supposed to be heated in a pot after following your instructions to spread it over base!

I have also made this terrific slice with limes & mandarines, infact any citrus fruit will do. I also grate a small amount of the rind and sprinkle this on the icing with the coconut. It adds a more interesting, colourful topping, & helps distinguish what flavour the slice is if you make a few different types at once.
I make mine with low fat biscuits, skimmed milk condensed milk & the lowest fat margarine (17% fat). The base comes out a little softer than using hard butter, but you can enjoy a few extra pieces guilt free!

I also had trouble with the icing, i couldn't spread it on the slice as it set hard straight away.
Made it a second time but added 40g of softened butter and the all the juice from a lemon and it was much better.

Hi, I made this slice last night and it is very good, but I had problems with the icing too, it hardened quite quickly, I had enough icing, but needed to be super fast putting it on, as it started to crack...I wet a spoon with hot water and rubbed it over the icing to help smooth it further, but was still difficult. I also think next time I'm going to use a smaller dish because my biscuit base wasn't as high as in the picture. Very yummy though!!

I found the icing to be a disaster too. Pretty sure it should have butter in it. Wasted time, money and ruined a saucepan. Any tips re getting toffee out of saucepans??

Evidently your recipe is falling short with the icing. I wish I had read about others' issues with the icing before making this.

The base was a treat and delicious, but the icing was disastrous! I heated it on a very low heat and measured out the lemon juice. It poured on to a small patch and went rock solid immediately. I made another 3 batches of icing to try and cover the thing, it was the same every time. I managed to cobble it together by constantly reheating the solid bits, but it looks a mess!

I will cut prior to serving. But this certainly needs some adjusting, as so many have reported problems. I am sure adding butter or oil would solve the issue next time.

I just made this.

Re: the icing, I simply didn't heat it. Lemon icing just needs sifted icing mixed with lemon juice, placed on the slice and it will harden in the fridge.

I just made this with rolled oats (processed so there were still a few whole oats visible) instead of biscuits. And I added some lemon zest to the base. It tasted exactly like the recipe my Mum used to make when I was a kid. Thanks so much!

Made this today and only read the comments after - always a sucker for a great picture... Had difficulty with the icing hardening before pouring then cracking as I tried to cover the slice. I found this overly sweet - condensed milk, sweet biscuits and icing sugar - OVERLOAD!!!

I just made this for the first time and it's really delicious and very easy to make. I added a very small amount of butter to the lemon juice in the saucepan for the icing just in case i had any problems and it's worked out perfectly. Everyone that's tasted it just loves it :)

Made 2 batches of this, first time as per recipe and second time with home brand scotch fingers rather than nice biscuits. Both are great but preferred the scotch finger one as the biscuits gave the slice a richer buttery taste, which we loved, but may of course not be to everyones liking. Also had to make more icing both times. First time I needed another half batch to cover the slice, second time I doubled the icing amounts straight up and it was the right amount to cover the slice. All up a great recipe. Only other change was I added the rind of a lemon to the biscuit mixture for some tang. Yum!!

I made this slice and the base was quick easy and yum!I also found that the icing tasted great but i suggest that if you dont like things to sweet then dont use as much icing sugar.I also found that nearly as soon as the icing was taken off the heat it started to set, this meant that i had to make the icing twice just so it would cover the base. But besides that it was really good! :)

I have made this recipe twice. Its soo awesome and simple to make. Its delicious, not too sweet, has the right coconut to biscuit and lemon ratio. the only problem I have is the icing sugar part. Mine doesn't seem to end up that thick, it may be because I add too much lemon juice. anyhow the extra coconut on top sends everyone coming back for more! thanks for posting all your wonderful recipes!
