Oat, Sultana and Choc Chip Slice Recipe


This soft oat and coconut slice is studded with sultanas and chocolate chips. It doesn't need to be refrigerated so it's great for lunchboxes.

Makes about 18 pieces (each about 4.5cm by 6cm).

We use a 20ml tablespoon and 250ml measuring cup for all of our recipes.

125g butter,(if using unsalted butter, add 1/4 teaspoon fine table salt with the butter)
1 tablespoon (20ml) golden syrup
150g (1 cup) self-raising flour
85g (1 cup) desiccated coconut
112g (1/2 cup) caster sugar
92g (1 cup) rolled oats
135g (3/4 cup) sultanas
125g (2/3 cup) milk or dark chocolate chips
1 large egg (we use eggs with a minimum weight of 59g)

Preheat oven to 180 degrees Celsius (160 degrees Celsius fan-forced).

Grease an 18cm by 28cm (inside top measurement) slice pan and line pan with baking paper.

Place butter and golden syrup in a small saucepan over low heat, stirring occasionally. Remove from heat when butter has melted. Alternatively, melt butter with golden syrup in a microwave-safe bowl in the microwave. Allow butter mixture to cool to lukewarm so that it doesn't cook the egg or melt the chocolate chips when added to the other ingredients. © exclusivelyfood.com.au

In a large bowl, stir flour, coconut, caster sugar, oats, sultanas and chocolate chips together until well combined.

In a small bowl, lightly beat egg with a fork. Add cooled butter mixture and egg to dry ingredients and stir until well combined.

Firmly press the mixture into the prepared pan using the back of a spoon.

Bake for about 20 minutes, or until golden. Allow slice to cool to room temperature in pan. Cut into pieces to serve. Store slice in an airtight container.

A very good slice!

Really easy to make, really cheap, and really tasty.

The golden syrup makes this slice different from other slices, although I also added brown sugar as well.

A must-try!

Hi Girls.
I have tried so many of your recipes, with fantastic results....and comments!!
But, I just don't know where I went wrong with this recipe. I measured all of the ingredients, baked at the correct temp and time - but it was so very dry and crumbly. I will endeavor to make again...hopefully with better results.

If the slice was dry, this could be due to an insufficient quantity of wet ingredients in relation to the quantity of dry ingredients.

The 'wetness' in this slice comes from the butter, golden syrup and egg. Did you use a large egg? If you use a smaller egg the slice will be a bit drier. We use an Australian metric tablespoon, which holds 4 teaspoons. Some of the tablespoons available here only hold 3 teaspoons. If you have one of the smaller tablespoons, that could explain a difference in the amount of golden syrup. However, that would only explain a one teaspoon difference, which probably wouldn't make a lot of difference to the slice. (If you want to check your tablespoon, carefully measure teaspoons of water into it and see how many it holds.)

Too much of the dry ingredients might be due to packing the ingredients into the cup more than we do. If you are using cups to measure the ingredients, you could try filling the cups more gently.

It may help the crumbliness of the slice if you press the slice mixture into the pan more firmly so it adheres together better.

If you've already done all of the above, maybe this slice just isn't your cup of tea??!!

Just made it tonight, and it's a big hit with the children - and the adults!!! Substituted the sultanas with white chocolate chunks and a few extra oats, and it's fab! Many thanks - keep the recipes coming.......

Yummy!
I just ate a piece and it was crunchy on top and crumbly and moist inside. I used Maple syrup as i'd run out of Golden Syrup and used brown sugar as well.

My whole house smells delicious now! The kids will be getting slices in their daycare lunch boxes this week.

Yummy recipe! I modified it by using dried cranberries instead of raisins and used SR Gluten free flour instead of wheat flour. It is a hit in our house.

I seem to make this slice about once a week! Its so easy and delicious - and quicker than rolling out cookies :) In theory, I am making it for my 3 kids - but I seem to eat as much of it as they do! Its lovely and quick to whip up for visitors for afternoon tea too.

Made this and I didn't have Sultanas or oats on hand so I used Craisins and Coco Pops and it was yummo! So easy.

Great recipe. I omitted the chocolate and added the same quantity of sunflower seeds, and I used raisins instead of sultanas. Tastes great, keeps well and the kids love it :)

I have made this slice several times now and it is always extremely popular. Last week I had run out of coconut so replaced it with an equal quantity of almond meal. The result was a slightly different flavour and texture of course but still excellent.

My favourite recipe website. I have made heaps of your recipes and they have all been excellent!
