Pancake Recipe
These pancakes are light, fluffy and tender. We like to serve them with butter and golden syrup, or berry compote and whipped cream. The recipe specifies full cream milk because we felt it gave a better result than reduced fat milk.
Makes about ten 11cm diameter pancakes.
We use a 20ml tablespoon and 250ml measuring cup for all of our recipes.
375ml (1 1/2 cups) full cream milk
2 teaspoons (10ml) lemon juice
35g (2 tablespoons) sugar
225g (1 1/2 cups) self-raising flour
1/4 teaspoon bicarbonate of soda
1 large egg (we use eggs with a minimum weight of 59g)
30g (1 1/2 tablespoons) butter, melted
Melted or softened butter, for greasing pan
Place milk, lemon juice and sugar in a medium bowl. Stir to combine, and then set aside for five minutes. During this time the mixture may develop a slightly curdled appearance.
Stir or whisk self-raising flour and bicarbonate of soda together in a large bowl until combined.
Add egg and melted butter to the milk mixture. Whisk the mixture until the egg has combined with the milk (the butter will probably just float on the surface).
Add the milk mixture to the flour mixture and whisk until almost smooth: the batter should still have a few small lumps. Don't overmix the batter as this may make the pancakes tough. Leave batter to stand while the pan is preheating (at least two minutes).
Heat a large non-stick frying pan over medium heat. When the pan is hot, lightly grease it with butter. © exclusivelyfood.com.au
Briefly stir batter in case the ingredients have settled during the resting time. Scoop 1/4 cup of the batter into the pan and use the back of a spoon to spread the batter out to form an 11cm diameter circle. Repeat to make another one or more pancakes, depending on the size of your frying pan. Don't overcrowd the pan as this will make turning the pancakes difficult.
Cook pancakes on the first side until small bubbles appear and burst on the top surface, about 1-2 minutes.
Turn pancakes over with a spatula. Cook until the second side is lightly browned and the pancakes are cooked through (about another 1-2 minutes).
Serve pancakes immediately, or stack and cover with a clean tea towel to keep warm while cooking remaining batter. Lightly grease pan before cooking the next batch of pancakes. You may need to reduce the heat after cooking a few pancakes because the pan may get hotter over time. © www.exclusivelyfood.com.au

Yum! How often do you ladies post recipes?
We haven't stored the batter overnight so can't advise whether this would affect the pancakes. To save a little time on the day, you could measure out the ingredients the day before and store them appropriately until required. Either fresh or frozen blueberries would be suitable to add to the pancakes.

These were so easy to make and the first recipe I've found that really do make pancakes which are light and fluffy. Soo good with peaches and custard or syrup.
Easy to make and a crowd winner
I have not made these as yet but mine are very similar. I have mixed them with coconut cream, and I have also used milk with a good 1/3 cup of vanilla yoghurt. They have always turned out light and fluffy. The secret to a good pancake is not to stir again after mixing.
Bloody good pancakes. All other comments true and correct. Light, fluffy and easy to make. Perfect with a bit of maple syrup.

This is he best pancake recipe I have come across. Other recipes are too dense, but this mixture is as good as the shops or even better. I was making pancakes for my fiance and I came across this one, and he totally loved it. Will use again as this would be a desert or breakfast pleaser for years to come :)

Love, Love, Love this pancake recipe!! I didn't have any lemon juice, so I used a bit of Apple Juice instead (I presume the lemon juice was meant to curdle the milk and I thought the apple juice might have a similar effect). The family loved them and they looked like store bought ones!!!

To the person who asked about the purpose of the lemon juice: The lemon juice and bicarbonate of soda react to form carbon dioxide, which helps the pancakes rise. The lemon also adds flavour to the pancakes. We have never tested the recipe without lemon juice, but one of the above commenters said the pancakes turned out well when they omitted the lemon.

Best pancakes EVER! I made them for my bofriend this morning and we have never had such light and soft pancakes. I used low-fat milk too (all I had in the fridge) which didn't seem to matter!

I made these pancakes dairy free using Nuttelex & soy milk. I have also made using cows milk. They were fantastic. Could not taste the difference. Thanks for a fabulous recipe.
Just this morning I was telling my son its been long time we had pancakes. Back home in Malaysia we get the pancake mix ( Pilsbury brand) comes in a box- the best we could get, but over here in Australia I notice the shops only the mix only comes in bottles ( I find inconvenient) as I have to use the whole mix once add water) so thus we never had pancakes at all until this morning when I surf the net and found your recipe. I tried it and my son loves it and he said its certainly much better than the store bought. Thanks. This will only be my one only recipe from now.

I cook pancakes on my cafe press (flat sandwich toaster) and this avoids having to turn them, and cooks them quite quickly. Just a little tip that might help others.

Followed this recipe exactly, only leaving out the lemon juice (as I didn't have any). Added 3 small very ripe mashed bananas - tasted lovely. Wasn't too sweet or runny. Served the pancakes topped with drizzle of maple syrup, dollop of cream and fresh strawberries with a sprinkle of icing sugar. Beautiful!

Very good are they surrposed to be thick, because i cooked mine and they came out quite thick but nice and fluffy inside still the best ive tasted so far !
Just made these for my dairy free kids, used rice milk instead of full cream milk, and nuttelex instead of butter and they came out perfectly. Mmm..delish!! Thanks so much!

This has to be the best pancake recipe ever!! Ive been using it for a few yrs now and they always turn out perfect. Ive recently been diagnosed with coeliac so i substituted the flour with gluten free flour and they still come out so light and fluffy...yum!!!

This is an AMAZING recipe!!! I didn't have any lemon so I used fresh orange juice they turned out fine. I served them with maple syrup bananas cooked in the oven, more maple syrup and vanilla Ice-cream they were Awesome!!!!!! They were for fathers day
